Cauliflower Couscous

Disclaimer: I saw this on a cooking show, but I loved the idea and I've done it a
couple of times at home. It's very fast and easy.

Directions
1 head of cauliflower
Salt, Pepper, EVOO

Directions
Very roughly chop the cauliflower removing the core and place in a food processor.
Blend until the cauliflower is processed into couscous like balls. Next, place a large
sauté pan over high heat, and turn on your broiler. Add EVOO and once the oil
shimmers add all the cauliflower, toss and spread throughout the pan. Season with
salt and pepper, then spray the top with Pam or oil mister. Do not stir the
caulifflower, cook 1 - 2 min on the stove top, then place in the oven top rack under
the broiler. Broil for 2 - 4 min until golden brown.
