Homemade Curry Powder:
1 tbsp whole coriander
2 cardamom pods, seeds removed
1 tsp whole cumin
1 tsp black peppercorn
Toast above spices in a dry pan until fragrant, then grind in a spice grinder
Separately, add these ground spices to a dry pan:
1 tbsp turmeric
1 tbsp garam masala
1 tbsp paprika
1 tbsp onion powder
1 tsp garlic powder
Heat in a pan for a few min until fragrant, then combine with above spices
If you do not have a whole spices, you can sub all store bought ground spices:
2 tbsp curry powder
1 tbsp garam masala
1 tbsp paprika
1 tbsp onion powder
1 tsp turmeric
I tsp cumin
1 tsp garlic powder
Add ground spices to a dry pan and toast for a few min. This is a very important step to bloom the spices.
Hummus
2 15 oz can chickpeas - drained and rinsed
fresh lemon juice - 1/4 Cup
tahini - 1/4 Cup
¼ cup ice chips or 2 tbsp ice water
Curry Powder
1 tsp salt
extra virgin olive oil - 2 Tbsp
Add everything but chickpeas to vitamix or food processor and blend.
Add chickpeas and blend. Depending on the consistency, you may need to add more oil or ice water to thin/smooth it out. Taste and add more salt if necessary.
Optional toppings:
Flavored greek yogurt (lemon, lime, etc)
Pickled something (shallots, pomegranate seeds, corn, raisins, etc)
Seeds or nuts (sunflower, pistachios, etc)
Fresh herbs (cilantro, basil, etc)
Flavored olive oil
